Chai

Ingredients

  • 1 cup milk
  • 2 cups water
  • Fresh ginger (sliced thinly or grated)
  • Lemon grass leaves
  • Loose black tea leaves
  • Tea masala

Instructions

  1. Pour the milk and water into a sufuria (saucepan) and bring it to a gentle, rolling boil.
  2. Reduce the heat slightly and add the fresh ginger (sliced thinly or grated) and the fragrant lemon grass leaves. Let their aromas bloom into the simmering liquid.
  3. Sprinkle in the loose black tea leaves and watch the color start to deepen.
  4. Let the tea come to a slow, mesmerizing simmer until it takes on a golden, inviting hue. I like my tea super orange.
  5. Add a pinch of tea masala to give your chai that signature warmth and spice.
  6. Bring the mixture briefly to a boil one last time, letting the flavors meld beautifully.
  7. Pour into your favorite cup and enjoy immediately — steaming, fragrant, and oh-so comforting.
