Not So Classic Pound Cake

Ingredients

  • 230 g margarine
  • 230 g flour
  • 3 eggs
  • 130 g sugar
  • milk (as needed for consistency)

Instructions

This is my own version of a pound cake. Classic pound cake demands a "pound"(about 450g) of everything. sugar,butter, flour. My version tweaks things a little but I have found it to create the most perfect balance, Try it out and see!

  1. Preheat your oven to 18o°C (350°F).
  2. Grease and flour your loaf pan or line it with parchment paper.
  3. Cream the margarine and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Sift the flour and fold it into the mixture gently.
  6. Add a splash of milk if the batter is too thick — the texture should be smooth and spoonable.
  7. Pour the batter into the prepared pan and level the top.
  8. Bake for 60 minutes, or until a skewer inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
