Not So Classic Pound Cake
Ingredients
- 230 g margarine
- 230 g flour
- 3 eggs
- 130 g sugar
- milk (as needed for consistency)

This is my own version of a pound cake. Classic pound cake demands a "pound"(about 450g) of everything. sugar,butter, flour. My version tweaks things a little but I have found it to create the most perfect balance, Try it out and see!
- Preheat your oven to 18o°C (350°F).
- Grease and flour your loaf pan or line it with parchment paper.
- Cream the margarine and sugar together until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition.
- Sift the flour and fold it into the mixture gently.
- Add a splash of milk if the batter is too thick — the texture should be smooth and spoonable.
- Pour the batter into the prepared pan and level the top.
- Bake for 60 minutes, or until a skewer inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
